Merritt Island to Get Awarded & Acclaimed Kolache Establishment

Kolache Bar, an acclaimed, Houston-based kolache establishment, will soon be coming to Merritt Island, according to recent public records. The establishment will be located at 213 Crockett Boulevard, within the Merritt Crossing shopping center. For those unfamiliar with the food, kolaches are a Slovak/Czech pastry with a savory or sweet filling. Kolaches in Texas, where Kolache Bar hails from, are often filled with sausage or ham.

“I’m the one who bakes all the goods,” says Partner & Chef Nate Sin, introducing himself to What Now Orlando. “I co-own the brand with Anna Meng, and will be running the Merritt Island location.” 

When asked for their motivation behind moving to Merritt Island, Mr. Sin points to the beginning of a future in central Florida.

“We just wanted to get our foot in the door,” Sin says. “This was a really good opportunity — The market is saturated with Dunkin’ Donuts, but no kolaches! This is a huge contrast to Houston.” 

Sin explains that this will be their very first location outside of Houston, where they have four locations — and resounding acclaim.

“We were voted Best Kolache by Houstonia Magazine and were also praised by Houston Chronicle,” Sin proudly exclaims.

And what does the future hold for Meng, Sin, and company?

“Eventually, we want to expand to Orlando — that’s the goal.”
