“We can’t change the service model. We can’t change the locations. But we can change the menu,” franchisee Patrick Fore told the OBJ. “It’s what the brand deserves, because let’s be honest, it’s been 20 years. It’s time to do something new.”

The changes come after an October partnership with 4Rivers to debut the Smoked Pork Empanada, the Spicy Pork Burrito and BBQ Pork Tacos, which impressed patrons.

“The 4Rivers collab is the very first vehicle that starts this innovation process. We’re renovating up to 40% of the menu,” said Fore.

“The operating partners met in Miami and talked about the feedback Lime was getting on social media. Customers correctly identified that the food was a little flat, it wasn’t craveable.”

Area locations will soon see physical improvements as well.

“The Lake Nona location opened three years ago, in 2020,” said Fore to the OBJ.

“It opened looking like this, with a more modern design than the older locations. Our restaurant near Disney and half of our South Florida restaurants have this design, and the other half are on schedule for renovation. In the next six to nine months, the rate of change in all the stores is going to create buzz and signal that gets us back to where Lime Fresh was once, which was healthy, fresh, novel and nuanced.”
