“We’re designing the tables and chairs in collaboration with product designer Jason Gregory of Makr,” owner Andres Cortón told the OBJ

“The design phase is my favorite part of opening a new location — that we get to respect the building and not just put some lipstick on it and say, ‘We have a new restaurant.’

“We want to make it thoughtful; we want to make it intentional, and we want that building to be a little oasis on Plant Street. We’re doing it organically and as quickly as possible — the business side kicks in and says, ‘Well, we can’t pay rent here forever and not open, so get it going.’”

“But we’re not going to rush it. I’m 45 and I started this whole thing when I was 22, so I did a lot of growing up and I’ve become a lot more thoughtful,” he said.

Unfamiliar readers can expect a classic Cuban cafe menu consisting of sandwiches, traditional plates and coffee alongside contemporary offerings such as salad bowls, “Cuban bowls” and more.

No opening date has been announced.
