Wafu is finding its home in the East End Market, according to Bungalower. The concept specializes in taiyaki, a Japanese waffle that comes packed with various fillings.
They will be moving into the space that Dochi plans to vacate soon. We covered Dochi’s relocation here, and owner Jason Le plans on leaving the space at 1222 E Colonial Dr in April. During a phone interview on Thursday, owner Zack Allam confirmed that they hope to be in the new space by May.
Owners Ben Paniagua and Allam decided on the name “Wafu” because it means Japanese-style, and it sounds similar to waffle.
The origins of the concept came from a trip the pair took to Japan. Shortly thereafter, based on inspiration from abroad, they started Wafu in August 2020. Allam told of their nervous beginnings in a tent at the Lakeland Farmer’s Market. However, the crowd quickly caught on, and by early 2021, they were serving out of a trailer. Now, they are moving into a brick-and-mortar store.
