“We are relocating to another spot simply because it’s a better location for us,” Vinson says. “We’re putting in a full kitchen, which wasn’t possible at the last location.”

When asked what will change conceptually, Vinson enthuses with specifics.

“It is going to be different — a more cohesive environment. It’s turned into a different business over the last seven years. This location will offer us an opportunity to start from scratch. We’ll still have wine tastings and our supper club (a 6 course, wine-paired dinner), but we will now be doing everything in house.”

Vinson explains that now, with an in-house chef, they will be able to transcend the simple cheese and charcuterie menu at the last location and offer a rotating menu that would (at least) feature an expansive beer selection, kombucha, and “unique sandwiches and tapas,” among other plates.

“It will be a very unique experience for Cocoa Beach. Our wine is boutique — you won’t find these in big box stores around here.”

So, when will this ambitious and exciting project open?

“I wish I knew that,” Vinson says. “But I will say that I’m shooting for the beginning of November, with our first supper club scheduled for December.”
