A new modern German restaurant, Schmakerl Stub’n, helmed by Bavarian-born chef Daniel Gabor, is coming to Orlando this winter.

The restaurant will be housed in the space formerly occupied by Neon Beach at 131 N Orange Avenue. Gabor was born and raised in Rosenheim, Bavaria, just south of Munich, where he began his journey in the hospitality industry working in a restaurant kitchen. He was also a part-time bartender while in school, which led him to study at London’s European Bartender School. He continued to bartend in his hometown before making the big move to the United States in January 2020 to study at New York City’s Culinary Institute of America. After he opened Dan’s Bavarian Takeout, which he operated out of a ghost kitchen in Dollins Food Hall. 

He has since shut it down to pursue his sit-down spot. He says the goal of the takeout concept was to test whether or not Orlando would be receptive to his German cuisine and cooking style. 

“[Dan’s Bavarian Takeout] was just a starting point,” Gabor tells What Now Orlando. “The goal is to bring a German restaurant to Orlando, but not like an American-German restaurant and more like a restaurant you would expect to go to in Germany.” 

His menu will have both standard dishes like schnitzel, offering both veal and pork options, Viennese fried chicken and Bavarian potato salad, as well as modern mixed-cuisine dishes like a fish fillet on top of a mushroom and tomato risotto, which is a creation he is currently tinkering with.

He also plans to have a select bar menu with German beers, European wines and cocktails. He has not determined the menu’s prices, but he says it will be a fair middle-ground rate for all to enjoy.

He hopes to hold special events like Oktoberfest in the future, but he is keen on keeping all of his enterprises authentically German.
