What happens when decadent, deep dish cookies and a micro bakery that likes its ‘sleazy’ sweets meet? Burg Cookie Company and Maddie’s Cakes will let you know. The two bakeries have partnered to bring us sweet-lovers Baked in the Burg. This seems like a somewhat natural development, as the two have been sharing a space in St. Petersburg’s Edge Collective Marketplace at 1234 Central Ave for over a year now.

But it looks like the duo may have outgrown that site.  “Our new space is coming along😍 We can’t wait to open our doors to you🙌🏻,” shared Burg Cookie Company as the caption to a photograph of the space in question. “Burg Cookie Company has partnered with @mad_for_cake and we are opening up a bakery called Baked in the Burg! Our bakery will be filled with our goodies as well as some of St. Pete’s favorite local businesses treats. Everything we sell will be locally made😍”

Burg Cookie Co is known for its deep dish cookies, which come in an assortment of striking flavors. Maddie’s Cakes got its start as a micro bakery in 2020—one of the lucky outcomes of the pandemic.

The bakery at 25 Dr. Martin Luther King Jr. St. is under construction, but Burg Cookie Co owned Ashlea O’Connor shares the new spot will likely open in early October. Renovations to the new space take the form of a lovely sea foam wall color and a refurbished counter.
