According to a press release, they have selected a restaurant design to serve as a basis for the nationwide roll-out. The first states to see the Pacific dishes are: Florida, North Carolina, South Carolina, Georgia, Texas, California, Idaho, and Washington.

The Arizona founded company is led by former MLB pitcher and 3-time World Series Champion, Todd Stottlemyre. As an athlete, Stottlemyre seeks to set industry standards by serving foods advantageous to our bodies’ health and immune systems.

Stottlemyre has commented on Koibito Poke’s partnership with True Capital Partners LLC. “I truly believe this exciting new initiative will be an integral step in building our all-star team. After spending a year looking for the right development partner, we are very pleased to engage with a group with such a proven track record for success.”

True Capital Partners LLC, based in New Jersey, has recently concluded a 160 store expansion with a previous company. Spokesperson Adam Daniel expressed their credence in contributing to Koibito Poke’s growth: “We’re very confident that we will attract experienced and successful franchise developers from around the country to be part of this new and exciting expansion.”

The current goal is to establish 120 stores in the next 24-30 months.
