When What Now Orlando talked with owner Andrew Scala, he told us that the story of JAM Hot Chicken reaches back to 2016, when Andrew visited his brother who was living in LA at the time. “We went to Howlin’ Rays in LA and I was so blown away by Chef Johnny Ray Zone’s establishment–the customer service the food, [everything there] made a really big impact on me.”

After this experience in LA, Andrew Scala started working in a pizza shop around 2017, that he said really got him into “loving being in a kitchen and cooking with a team. It was so rewarding for me,” he said.

This love of cooking quickly turned into cooking hot chicken for friends and family on the weekends, then “we created a page on Instagram just for fun” to showcase what they were making. “Then 2019 rolls around and I had this inclination to do a pop-up. We did our first pop-up in October 2019 and it went really well.” JAM Chicken started up during the pandemic doing curbside pick-up. That quickly turned into weekly events, all advertised through Instagram.

We can’t wait to see what JAM Hot Chicken will be cooking up for us with this next step. We were told the menu is still is development, but to definitely expect their famed hot chicken sandwich.
