Cocktail and Farm-to-Table Concept Coming to Indian Harbour Beach

Brevard County will soon welcome Vibrant Alchemy by way of business partners Megan Gonzalez and Kieran Muir. Described by Gonzalez during a phone interview as a cocktail bar and farm-to-table concept, the restaurant will not serve alcohol. Taking a holistic health approach, they will offer cocktails made with adaptogenic herbs with healing properties that have euphoric effects.

Guests can expect a rolling and curated menu. Gonzalez commented that they will serve a “tapas heavy menu with a lot of sharable plates. Lunch and dinner will feature board specials each day with four to five entrées based on local ingredient sourcing.”

You can expect fresh fish, tomahawk rib-eye and duck breast to be among the dinner options; and for lunch, you’ll see sandwiches, salads and burgers. The decor will be “a little on the high-end side, but still approachable,” Gonzalez reports. 

The concept was born when Gonzalez and Muir noticed the trend of adults seeking social hubs and hangouts that don’t center around drinking alcohol. A focus on holistic health will be a staple of their establishment, which is another growing trend that the pair have noticed. 

In the process of designing the restaurant, Gonzalez hopes to begin construction soon. The goal is to be open at the end of April. The address will be 250 E Eau Gallie Boulevard.

“We want to bring a full cocktail experience in a place where people gather with their friends without a need to drink,” Gonzalez said.
