“We’re trying to grow our business after opening a location in St Petersburg, one in Melbourne, and another in Philadelphia,” franchisee Huynh T Mai tells What Now Orlando. “We have Banh mi, which is our specialty, and then pho and boba. That’s our concept, basically.”

When asked to describe the ambience or the customer experience, Ms. Mai draws comparisons to known US fast casual brands.

“It’s like Panera or Starbucks, where most of our customers come in and buy take out,” she explains. “The food is based on my recipes and I cook the food myself in the kitchen.”

When asked about the opening date, Ms. Mai looks to the very end of Q1 or beyond.

“We hope to open by mid-April, but we have construction delays so it’s not set yet.”

Until the Melbourne Banh Mi Saigon Baguette opens its doors, readers may visit its locations at 7261 US Highway 19 North in Pinellas Park, FL.
